About the Program

Ethnic foods are regaining their space on the Indian culinary landscape and the job segment is likely to grow as more businesses come up. To cater to this ever growing segment, SVSU has designed a Diploma in Ethnic Foods & Sweets Processing under the dual vocational education model. The program is aligned with National Skill Qualification Framework (NSQF) Level 5, which is being conducted at SVSU in collaboration with our industry partner Bikanervala Foods Pvt. Ltd. Processing of ethnic foods involves use of raw ingredients to produce marketable food products that can be easily prepared and served to the consumer. Typically processing activities are mincing, emulsification, cooking (boiling, broiling, frying and grilling), pasteurization, preservation and canning or other packaging. Primary processing also includes dicing, slicing, freezing and drying when preparing secondary products.

Tourism and hospitality industry, and apart from that public and private sector undertakings, NGOs and art and culture organization that have high demand for art professionals for their heritage and conservation projects. That apart an ethnic food expert can be an entrepreneur in himself promoting this art form which was lost in oblivion until SVSU brought it back to front.

Industry Partner

SVSU conducts this course in collaboration with Bikanervala Foods Pvt. Ltd. is a leading manufacturer of Indian foods, snacks and sweets and restaurateur of repute in India and abroad. Bikanervala has paid attention to the aspect of training and skilling of its workforce and has sufficient infrastructure.

OJT, Programme Model and Pedagogy:

SVSU has built a strong partnership with the Industry to facilitate students’ employability and entrepreneurship through the On-the-Job Training (OJT). The university has designed, developed and deployed Industry Integrated Dual Education Model (IIDEM) that facilitates “Earn-while-Learn” and provides the students with the opportunity to enhance their qualification with flexibility of entry and exit into a program. HVSU has conceptualised the IIDEM program, which is designed in such a manner where 60 percent of the credits are earned while working on the OJT or on National Apprenticeship Promotion Scheme (NAPS), wherever applicable. The students shall also earn stipend for that period. The classroom training shall be imparted by the SVSU faculty and other industry experts. The curriculum is based on theoretical and conceptual training as well as OJT. Practical and workshop experience are the key components of the overall training methodology. Forty percent of the credits shall come from the theoretical and conceptual training. The entire pedagogy is designed to develop application-based learning that will make students job-ready by earning industry work experience and learning the technical concepts hands-on.

Step 1: Entrance exam (70 Marks)
